Im not a huge fan of cooking, most of the time its just what I do because we have to eat,, but I do love to cook homemade vegetable soup. Most of the time I make it with frozen veggies for the most part and add fresh potatoes and onions with whatever kind of meat I want at the time. But this is my SOUPER SIMPLE, ready in no time, perfect for a quick weeknight meal , veggie soup.
I used 1 fat can of mixed veggies, 1 15 oz can of tomato sauce, 1 chicken breast cubed and cooked til white, 1/2 can of chicken broth and 1 can of beef broth.
Cut chicken into small pieces and cook with a dash or two of onion flakes (or diced onion) in about a tablespoon of butter in skillet until white.
Add all other ingredients in your favorite boiler and bring to a boil, add chicken and onion mixture and reduce heat and let simmer for about 20 -25 minutes. Serve with crackers, cornbread and or a crispy grilled cheese sandwich and voila supper is done.
Enjoy!
And I just cant resist a pic of my little angel.
What a sweet little angel. I love soup and we have it often in the winter. This sounds like a good recipe.
ReplyDeleteThat is the sweetest little baby. I wouldn't get anything done for just looking at her. I will use your soup recipe. I have beef thawing now to make some over the weekend. I never thought of adding chicken instead.
ReplyDeletei do mine with veg all, ham, and several cans of diced tomatoes, plus water.
ReplyDeleteSoup sounds yummy and the baby is adorable!
ReplyDeleteP.S. I'm blogging about soup tonight, too!
